Thai Cashew Chicken
2 cups chopped vegetables (carrots, onions, peppers, whatever you have on hand)
1 chicken breast, sliced 1/4″ thick
2 Tbs oil
2 Tbs Save the Day Thai seasoning
1/3 cup cashews
Saute chicken in 1 Tbs oil until cooked. Set aside. Add 1 Tbs oil to the same pan and cook vegetables for 3-4 minutes. Add seasoning and 1 Tbs water. Add chicken back in. Add cashews and cook for 2 minutes. Serve over rice. Add more seasoning to taste.
